Brioche is a French bread that is made with a rich dough with eggs and a higher level of butter added. It's often served at breakfast in France and I have also seen it served with drinks at a wedding.
Everybody loves a good bread and butter pudding. There's lots of ways of making bread and butter pudding. The most basic pudding is quite simple to make. A deluxe bread and butter pudding takes a little bit of extra time and effort, but the results are well-worth it. Whichever pudding you end up making, you are bound to end up with a crowd-pleaser.

Ingredients

2oz/50g (4 tablespoons) butter, softened

½ large baguette (about 5oz or 150g), broken by hand or sliced

6-1/2 tablespoons (60g) golden raisins or dried cranberries

2 extra-large egg yolks

2 extra large eggs

3-1/2 tablespoons granulated sugar

1-1/4 cups (300ml) heavy cream

1-1/4 cups milk

Demerara or dark brown sugar
Directions
Use some of the butter to grease the sides of a 1-1/2 quart (1.5 liter) shallow baking dish. Spread the bread slices with the remaining butter. Arrange the bread in the dish in overlapping layers, sprinkling the dried fruit in between.
Beat the egg yolks, whole eggs and the granulated sugar together in a large bowl until creamy, then beat in the cream, milk and liqueur. Slowly pour this mixture over bread.
Press the bread slices down gently with your fingers so that they are completely submerged. Let the mixture stand for about 20 minutes so they can soak up the custard.
Preheat the air fryer @ “BAKE” to 350F/175C with “CONVECTION” function.
Set the dish in a roasting pan and pour enough boiling water into the pan to come half way up the sides of the dish. Sprinkle with the Demerara sugar and bake for 35-40 minutes until golden.
Remove the pudding from oven. Now if you like to have more a crusty finish on your bread pudding, place the dish back in the air fryer, under the broiler for 3-5 minutes more. The custard will continue to cook and firm up during this time.
This recipe is a great way of utilizing leftover bread and is an easy to make a quick and easy dessert for all to enjoy.
To complete this bread pudding, you can easily place a scoop of ice cream or Chantilly cream if you have it; or even with some fresh fruits like raspberry, blackberry or strawberry.
