Pigs in a blanket make for a classic, yet simple dinner idea the whole family loves. We love to switch these out each much with hot dog nuggets and homemade corn dogs, but one this is sure – they’re always a hit!

Ingredients

2 x Italian pork sausages

1 egg white

1 tablespoon corn flour

1 cup Italian breadcrumb

1 teaspoon fresh Italian parsley, medium chopped

1 teaspoon fresh rosemary, chopped

Coarse sea salt, to taste

Freshly ground black pepper, to taste

1 tablespoon olive oil
-
½ teaspoon coarse mustard
-
½ teaspoon sweet mustard

Fresh lemon juice
Directions
Make sure the sausages are at room temperature.
Preheat the air fryer @ “ROAST” to 375F/190C with “CONVECTION” function; spray the wire basket with cooking oil spray.
Place the egg white in a small bowl and whisk it slightly with a small amount of foam. Now place the whisked egg white on a small plate and set aside.
Roll the sausages in the corn flour first and then dip in the egg white. Now roll the sausages in the breadcrumb, make sure the sausage is thoroughly covered.
Repeat this process one more time, the sausages should have a firm crust on it for cooking.
Air fry the sausages for 12-15 minutes in the wire basket lined with home-made parchment paper; when finish, flip the sausages over and cook for another 8 minutes.
Add some lemon juice and mix well; add some cayenne if you like it spicy.
Sprinkle some black pepper over top of the mixed mustard.
To serve, place the sausage on a plate, add a few Heirloom tomato and a small amount of the mustard mixture. It’s a nice way to sample sausages.
