Nachos has become a popular dish for a lot of different places across the continents. From Ireland to Africa you are able to find nachos in almost every nook across the globe, from “dive” bars to “haute cuisine” we find facsimiles of this southern Mexico concoction.
Oaxaca locates in the southern part of Mexico, with a rich history of ethnic groups, as well as one of the first regions colonized by the Spaniard conqueror Cortez in Meso America. As result, Oaxaca has a rich culinary history, incorporating many traditions of ethnic culinary traditions, as well as being know of offering the best versions of beloved “mole” using amazing chocolates produced in the region.
Nachos is today is served as snacks, bar food, party food, sporting and entertainment event staples and most commonly after-school and/or family snacks. With the “Val Cucine Air Fryer” it is very easy to make, with very little clean-ups necessary, and sumptuously consumed. We are choosing recipe from Oaxaca for your enjoyment.
This recipe is using a spicy sausage. But you can use a variety of meats or other toppings if you prefer, such as pulled oxtail, chopped beef steak, pulled pork, roasted chicken or vegetables.

Ingredients

4-5 oz of tortilla chips

1/3 cup canned black beans, slightly crushed

2 heirloom tomatoes, chopped
-
½ small avocado, crushed
-
Small amount of white onion, finely chopped
-
1 teaspoon fresh lemon juice
-
1 3oz pork sausage (spicy if preferred) or chorizo
-
Pinch of cumin
-
¼ cup chopped scallion
-
Jalapeno chilis, chopped (to taste)

½ - 1/3 cup Oaxaca, cheddar or any cheese you prefer

1 heaping tablespoon sour cream
-
Coarse & freshly grounded black pepper

10oz Oaxaca or Asadero Cheese or
Cheddar (&/or other Mexican cheeses)

¾ cup of “Half & Half” or milk
-
4-½ oz of chopped green chilies (fresh or canned)

1 good size ripe tomato, small diced
-
¼ cup jalapeno, chopped
-
¼ cup cilantro, chopped
QUESO (CHEESE) DIP
Directions
MAKE THE QUESO DIP
Break up the cheese & place it in a sauté pan over low heat;
Add ¾ cup of “half & half” or milk to the cheese, stirring occasionally to avoid clumps in the sauce; mix until the two ingredients combined & thickens;
Add the green chilies, tomato, cilantro & the jalapeno, mix it well until combined;
When the ingredients are well mixed, turn off the heat and pour the “queso” dip into a serving bowl.
MAKE THE OAXACA NACHOS
Set “air fry” function to “A3”; set temperature to “330F”; set timer to “5-7” minutes; place cooking basket in the middle of the air fryer when cooking; preheat the air fryer;
Start the nachos by cutting the “jacket” open encasing the sausage;
Remove the meat and fry it in a sauté pan with a little oil;
Add a pinch of cumin to the sausage meat while cooking;
When the sausage is cooked to the consistency you desire, remove it from the pan onto a paper towel to drain away the excess oil;
Take ½ ripe avocado and smash it with a fork into a coarse-sauce consistency;
Add a teaspoon of lemon juice to the avocado so it does not discolor, set aside;
Now add some lemon juice or liquid such as white wine to the sour cream if it is too thick, again we need it also in a sauce like consistency;
Chopped the tomatoes and the jalapenos into small bits, set aside;
Take the black beans and mash them slightly also with a fork to similar size of the sausage;
Now you can assemble the nachos by placing the tortilla on a piece of parchment paper in the air fryer basket;
Starting by a single layer of the tortillas, add some cheese to the first layer and then add the next layer;
Make sure the tortillas are not too compacted between the layers, you want the air to circulate and melt all the ingredients to get amazing nachos;
As you get near the top, start placing the black beans, the sausage meat and the white onion;
When all the tortillas have been used up, spread the mashed avocado, the chopped tomato, the jalapeno and the chopped scallion all over the top;
Place the basket with the nachos into the air fryer and air fry;
When the Oaxaca nachos are cooked, take it out of the air fryer and place them on a plate with the parchment paper underneath;
Now spread the sour cream in a random manner over the nachos and serve;
