Air Fried Cajun Popcorn

Cajun cuisine is rooted in the French-Canadian tradition but incorporated many local culinary components as they migrated from Quebec to southern Louisiana. Cajun cuisine is known for its rich spices and impacting flavors. Cajun popcorn is made popular in the 1980’s by chef Paul Prudhomme of Kay Paul’s restaurant in New Orleans. We have adopted his recipe for the Val Cucine Air Fryer, the result is an astoundingly delicious snack for all ages.
In addition, we have composed a spicy aioli to add more zest to the Cajun Popcorn.

Ingredients
- 300g / 2 cups crayfish meat @ room temperature
- 1 large egg, well beaten
- ¼ cups milk
- ¼ cup medium-grind corn flour
- ¾ cup all-purpose flour
- 1 teaspoon sugar
- 1 teaspoon salt
- ½ teaspoon onion powder
- ½ teaspoon garlic powder
- ½ teaspoon white pepper
- ½ teaspoon cayenne
- ¼ teaspoon dried basil
- ¼ teaspoon dried marjoram
- 1/8 teaspoon ground white pepper
- 2-½ tablespoons mayonnaise
- 1 teaspoon fresh lemon juice
- ½ teaspoon honey
- A good pinch of cayenne powder
SPICY AIOLI
Directions
- Set “air fry” function to “A3”; set timer to “6” minutes;
- Set temperature at “360F”; place cooking basket in the middle of the air fryer when cooking; preheat air fryer;
- Combine the eggs and milk in a small bowl, blend well;
- In a large bowl combine the flours, sugar and seasonings, mix well.
- Add half the egg mixture and whisk until well blend, then thoroughly blend in the remaining mixture.
- Cover the bowl, let it sit in room temperature for one hour to let the flour expand.
- When the flour mixture is ready to use, dip the crawfish in the batter and then remove individually onto a plate of corn flour, roll the crawfish pieces and place in the basket of the air fryer.
- Cook the crawfish in the air fryer for 6 minutes; turn the crawfish pieces over about half way during the cooking process in order to get evenly cooked Cajun popcorn.
- If you like your Cajun popcorn with a spicier finish, sprinkle some additional Cayenne powder on top if you like. Or you may serve the popcorn with the spicy aioli.
