Kale is one of the most nutritious in the green vegetable group. It is high in fiber, antioxidants, vitamin A and calcium, as well as B vitamins, vitamin C and potassium. It’s also fat- and sodium-free, and the minuscule amounts of olive oil and salt used in our recipe barely bump up those amounts.

Ingredients

10oz / 230g kale leaves, washed & dried

2 tablespoons/1oz/30g of Extra Virgin olive oil or light cooking oil

3.5 tablespoons/1.75oz/50g shaved cheddar cheese

½ teaspoon of coarse kosher salt

½ teaspoon of sugar

Pinch of ground black pepper (optional)

Varieties of dried spices such as garlic, onion or curry powders (optional)
Directions
Preheat the air fryer @ “BAKE” to 350F/175C with “CONVECTION” function; spray the wire basket with cooking oil spray.
Hand-tear the kale leaves (with leafy vegetables it’s always better to tear leaves rather than cut by knife) to 2-3 inches pieces.
Soak the kale for 15-20 minutes, then wash & spin dry the kale leaves.
Now toss the dried kale leaves with the olive oil.
After that sprinkle the salt, the sugar and the black pepper.
Place the kale leaves in the wire basket and bake for 6-8 minutes (make sure you turn the kale leaves over half way through the cooking process) until they have taken on the crispiness you desire.
After the kale leaves are cooked and become partly crispy, take them out of the Val Cucine Air Fryer, and while the kale leaves are still warm sprinkle the shaved cheddar cheese over the kale, on both sides.
Let cool and serve.
Note: Should the basket in the air fryer becomes too full for cooking purposes, you might consider cooking the kale chips in 2 batches for more efficient results.
Recipe Note
Alternatively, you could toss in the shredded cheese first and have the cheese melt with the heat onto the kale. If you so decide to make the kale chips this way, make sure you check the cooking time so the kale chips are not burnt because of the shredded cheese. Either way, it is a great accompaniment to dishes you serve, or just simply as an appetizer or an after-school snack.
